For hot days you need cold desserts. So I made this delicious mini tarts (2 of them) and here is the recipe for you! If you are not a fan of chocolate (if you are then check this recipe) but a fan of fruity desserts, then this is perfect for you. The raspberries gives this beautiful pink colour (my favorite colour of cakes) and makes it very sweet (but not too sweet!)
The recipe is in english and german.
This recipe is for 2 mini tarts, 12 cm each, so you will probably have some dough left from the crust. With the left over, make some blissballs and eat when you are cravling for something sweet.

Pink Raspberry Tarts
Recipe
For 2 tarts, 12 cm each
Ingredients:
Crust:
1/2 cup almonds
1/2 cup dates
1/4 cup grated coconut
1 tsp vanilla
Instructions:
1. First mix the almonds and grated coconut in a blender. After 1 minute add the vanilla and dates. Mix for about 1 more minute.
2. Press mixture evenly into the heart shaped shells. (About 2 hearts each 12 cm)
3. Refrigerate until the filling is ready.
4. With the leftover from the dough, make some small blessballs. (the perfect snack!)
Filling:
3/4 cup soaked cashew (for at least 8 hours)
1/4 cup coconut cream (full fat coconut milk)
1/2 cup raspberries
about 3 tbsp maple syrup or agave
3 tbsp virgin coconut oil
1 tsp vanilla
a pinch of salt
How to:
1. Mix all ingedients exept the raspberries in a high speed blender for about 10 minutes until very smooth. Scraping down the sides when needed. Add the raspberries and mix for about 1 minute more.
2. Fill your heart shaped shells with pink raspberry filling.
3. Refrigerate until set (1-3 hours)
4. Serve with fresh summer strawberries.

Rosa Himbeer-mini-kuchen
Rezept
Für 2 kleine 12 cm Torten
Zutaten:
Boden schicht:
100 g Mandeln
100 g Datteln
25 g Kokosraspeln
1 TL Vanille
Anleitung:
1. Zuerst die Mandel und Kokosraspeln in ca. 1 Minute zerkleinern.
2. Danach die Datteln und Vanille dazugeben und weiter mixen bis die Mischung anfängt, zusammen zu kleben.
3. In 2 kleine Formen ausdrucken. Ca 12 cm Groß.
4. Ins Gefrierfach hineinstellen bis die Füllung fest geworden ist.
(Wenn Teig übrig bleibt, einfach ein Paar Bällchen davon machen und als Snack essen wenn die Lust nach Süßes da ist!)
Füllung:
117 g eingeweichte Cashewnüsse (Mind. 8 Stunden)
80 g Kokosjoghurt oder Creme (die feste Masse von der Dose)
25 g Kokosöl (Bio & Virgin)
30 g Agavendicksaft oder Ahornsirup
80 g Himbeeren
1 TL gemahlene Vanille
1 Prise Salz
Anleitung:
1. Alle Zutaten außer Himbeeren in einem Mixer geben und für ca. 10 Minuten pürieren lassen bis die Konsistenz ganz fein und cremig ist. Danach die Himbeeren dazu geben und eine weitere Minute pürieren lassen.
2. Die Füllung in die Formen geben und ein paar Mal gegen den Tisch klopfen, damit die Luftbläschen sich auflösen, und zurück im Kühlschrank stellen.
3. 1-3 Stunden warten bis die Füllung fest geworden ist.
4. Mit frischen Erdbeeren genießen!
